Happy 2011!

Happy new year to you all!  I hope you have all recovered from the festive season pretty well 🙂

To greet the 2011 I have decided to do a bit renovations here and there on this site.  Yes, I know I have been absent posting for such a long time.  One of my resolutions are to update and posting more on The Shallow Kitchen, I promise!

I’m still working on this site so you may find something is missing or misplaced.  But I promise that this year I will be regularly posting new recipes and photos.  As it said by Luciano Pavarotti; ” One of the very nicest things about life is the way we must regularly stop whatever it is we are doing and devote our attention to eating “.

Food:yum in tum tum – Lamb

Chilli Lamb with Coconut Cream & Coriander
Ingredients:
  • 1 tbs peanut oil
  • 2 small fresh red chillies, chopped
  • 1 clove garlic, crushed
  • 2 tsp grated fresh ginger
  • 1 medium onion, sliced
  • 450gr lamb fillets, sliced
  • 1 tbs fish sauce
  • 2 tsp sugar
  • 3/4 (180ml) coconut cream
  • 2 tbs chopped fresh coriander
  1. heat oil in wok
  2. add chillies, garlic, ginger and onion
  3. stir fry onion until soft, remove
  4. add lamb in batches, stir fry until lamb is tender
  5. add onion, sauce, sugar, coconut cream and coriander, stir until hot
